What is “Gluten Free”?

“Gluten” is a Glycoprotein found in wheat products. It also refers to a general name for the proteins found in barley, rye, etc. Gluten is found in bakery, oatmeal, cereal, etc. It helps with shape maintaining, squishy texture, and binding food ingredients together. 

Unfortunately, some people have gluten allergy or Celiac Disease which cause damage to their small intestine system and leads to symptoms, such as, malnutrition, bloating, diarrhea, fatigue, nausea, and migraine. 

Gluten Allergy is an Autoimmune Disease which cause damage to a small intestine system and prevents it to absorb nutrition which leads to various symptoms aforementioned. There is no cure yet to be found for this disease.    

In modern times, people are more prompt to gluten allergy. It consists 1% of world population. In the US, we can find people with gluten allergy 1 out of every 133 persons. 

Even a small trace of gluten can cause gluten allergy. It may take days or weeks to recover back to normal stage of heath. Therefore, avoiding gluten products is the only solution of those people. 

Thai desserts are made of rice flour, glutinous rice flour, or tapioca flour which are non-gluten. This is same to Japanese desserts like mochi, daifuku, and dango. 

Not only does gluten allergic people need gluten free food but also people with serious health complications and people who loves to stay healthy are interested in gluten free food. This trend is getting bigger and going worldwide.
